One of the things I always think about around Halloween are the hard caramel popcorn balls that haunt my childhood. Do you remember those? The break your teeth, pull out your fillings, end up in the trash popcorn balls? Truly, it’s the stuff of nightmares. I didn’t like them then and I certainly don’t like them now. However, I do love caramel popcorn as long as it doesn’t threaten to pull out my teeth!
I have an awesome recipe that I want to share with you. It’s soft, but not messy and tastes fabulous. This is delicious caramel popcorn that seriously disappears whenever I make it. And it is super simple- just five ingredients! I’m not a big fan of anything that is difficult or takes too long in the kitchen. This recipe is neither of those, I promise. I’m certain you’ll fall in love once you try it!
- 2 c brown sugar
- 1 cube butter
- 1 c light corn syrup
- 4 bags microwave popcorn, popped with unpopped kernels removed OR two 4.5 ounce bags of popped popcorn OR half a Costco sized bag of Nearly Naked popcorn
- 1 can sweetened condensed milk
- Pour popcorn into a large bowl and set aside.
- Slowly, over medium heat, bring to a boil brown sugar, butter and corn syrup.
- Add sweetened condensed milk.
- Cook 3 to 4 minutes more, stirring constantly.
- Pour over popcorn and stir well.
- Spoon onto waxed paper to cool; it will be less sticky this way!
