I’m all about my Instant Pot making dinner easier and this Corned Beef and Cabbage recipe is a winner! The total truth though, is my kids hate cabbage. As you can see from the picture, there isn’t a bit of cabbage in sight. We improvise with other vegetables that they will eat and the meal is still a success!
I have some cheats for you in making this meal. The biggest one is this: I bought my corned beef already seasoned and cured from Costco. Worth. Every. Penny. Truly people, Costco was made to simplify our lives and when you can take advantage of it, do it! This is one of those times. Buy the vacuum packed corned beef and throw it in your Instant Pot.
Corned Beef in the crock pot will cook all day; on your stovetop it will take over three hours. It takes 80 minutes in your Instant Pot and will come out tender and falling apart.
- Corned Beef from Costco

- 5 cups of water
- 1 half a head of cabbage, cut in quarters
- 4 russet potatoes, cubed
- 20 baby carrots
- 4 celery stalks, chopped in large pieces
- Salt and Pepper, to taste
- Place beef in Instant Pot on the rack.
- Add garlic and water.

Whether you’re a seasoned corned beef cooker or just a beginner, this is the way to go! Even I can’t go wrong with something this simple! The Instant Pot does it again- keeping my meat tender and my schedule free! Love it!! 🙂
