I’m all about my Instant Pot making dinner easier and this Corned Beef and Cabbage recipe is a winner! The total truth though, is my kids hate cabbage. As you can see from the picture, there isn’t a bit of cabbage in sight. We improvise with other vegetables that they will eat and the meal is still a success!

Buy the vacuum packed corned beef and throw it in your Instant Pot. 

Corned Beef in the crock pot will cook all day; on your stovetop it will take over three hours. It takes 80 minutes in your Instant Pot and will come out tender and falling apart.

Ingredients
  1. Corned Beef from Costco
  2. 2 cloves of garlic, minced
  3. 5 cups of water
  4. 1 half a head of cabbage, cut in quarters
  5. 4 russet potatoes, cubed
  6. 20 baby carrots
  7. 4 celery stalks, chopped in large pieces
  8. Salt and Pepper, to taste
Instructions
  1. Place beef in Instant Pot on the rack.
  2. Add garlic and water.
  3. Secure lid and set to Stew/Meat; adjust time to 80 minutes.
  4. Once time is up, use quick release to let out steam.
  5. Remove meat and rack and place on a platter. Cover meat with foil to keep warm.
  6. Add chopped vegetables to Instant Pot, without removing water.
  7. Secure lid and set to 5 minutes.
  8. Once time is up, use quick release to let out steam.
  9. Spoon vegetables in to a bowl with a slotted spoon. Salt and pepper to taste.
  10. Shred meat into pieces.
  11. Serve and enjoy!
