I’m so happy it’s September! Even though the heat is still killing us in Southern Utah, I’m ready for fall and everything that comes with it. In Western Washington, where I grew up, September brings a new school year, crisp, cool mornings, and everything apple! One of my favorite memories is coming home from school and opening the door to the scent of my mom’s delicious apple cake. The apple and cinnamon literally carried me to the kitchen for a warm piece, straight out of the pan. Even now when I smell it baking in the oven, I’m taken back to my parent’s kitchen. I love it! The great part about this recipe is you can make it healthy without sacrificing the taste! Using whole wheat flour and applesauce (in place of the oil) make this recipe good for you, as well as delicious.
- 4 cups apples with skins, sliced (I grate mine through the Cuisinart)
- 1 1/2 cups sugar
- 2 large eggs, beaten
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 1 tsp salt
- 2 tsp baking soda
- 2 1/2 cups flour (use whole wheat for a healthier option)
- 1/2 cup applesauce (may substitute 1/2 cup oil)
- 6 ounces chocolate chips
- Preheat oven to 350 degrees.
- Combine eggs, applesauce (or oil), sugar, vanilla and grated or chopped apples.
- Stir in soda, salt, flour and cinnamon.
- Stir in chocolate chips.
- Pour into a greased and floured 9x13 inch pan.
- Bake until cake pulls away from sides of the pan, about 30-35 minutes.
- Top with sifted powder sugar when the cake is cool.
