We’ve had this amazingly mild winter here in Southern Utah and the  70° temperatures are turning my thoughts to spring! One of  the best things about the weather change is the fresh fruit that is going to be in season. I love having fresh berries in my fridge at all times- it’s the one thing my kids will always devour. In keeping with my spring fever, I thought I’d share my favorite fruit salad recipe with you. It’s perfect for this time of  year when the fruit might not be quite ripe enough to hold its own. We’re adding other sweet ingredients that make this the perfect fruit salad for any season! 

The best thing about a fruit salad is there’s no real recipe to follow. It doesn’t matter how much fruit you put in or what kind you use- it all blends together and works. I don’t ever measure, but let me give you an idea  of what we’re looking at: I used six fruits in this salad and somewhere between a cup and a cup and a half of each one. We are looking at roughly 8 cups of fruit. To that fruit, I added half a container of Cool Whip and half of a small box of vanilla pudding powder. Super simple. Super delicious.

And you can’t mess this one up, which is one of the reasons I love it! Even if you added an entire container of Cool Whip and a whole box of pudding mix, you’d still think this fruit salad was delicious. You’ll also notice I used canned pineapple in my salad… the fruit doesn’t even need to be fresh if you don’t have any fresh handy!
