This Sausage Egg Roll Casserole recipe is surprisingly delicious and super easy. As I was making this dish tonight, my seventeen year old daughter came in and said, “Oh good, I love that stuff!” Sometimes with casserole type dishes I understand the ‘stuff’ comment. You never quite know what is in it! But this one is yummy and versatile, meaning it works for dinner but would be equally tasty for breakfast as a yummy breakfast casserole. I compare this casserole to sausage and biscuits with a side of eggs, just all mixed together. Or even breakfast burritos with a side of gravy. A little strange, but I know you want to give it a try!

Sausage Egg Roll Casserole
Serves 6
Easy dinner or breakfast casserole with sausage, egg, corn and gravy. Perfect way to use up those extra hard-boiled Easter eggs.

Ingredients
  1. 1 lb ground sausage
  2. 6 Tbsp butter (if sausage has lots of extra oil, omit this or decrease)
  3. 6 Tbsp flour
  4. 3 cups milk
  5. 12 hard-boiled eggs, diced into cubes
  6. 1 can corn, drained
  7. 2-4 slices of bread or rolls, broken into cubes (optional)
Instructions
  1. Brown sausage in large pan.
  2. Move sausage to side and melt butter in same pan.
  3. Stir in flour until all the oil is absorbed.
  4. Wisk in milk and continue stirring until mixture comes to a boil and thickens like a gravy.
  5. Add diced eggs.
  6. Add in corn.
  7. Mix
  8. Place in casserole dish or 9x13 baking dish.
  9. Top with bread
  10. Bake at 350 for 20-30 minutes until bread is golden on top and warmed through (if not browned but warm turn on broil for 1-2 minutes to finish toasting the bread. Watch close!).
Notes
  1. If you are in a hurry, omit baking in the oven and mix in the bread for a one dish casserole wonder. This speedy option is an equally good choice and is only missing the toasted bread.
