With only five ingredients for this recipe, you can’t mess this one up! I tend to make this meal when I have leftover rice so I can skip the step of making the rice, making this even easier to throw together. Though this recipe does require a longer cooking time, I love this week night meal as I can throw it together quickly and clean up the kitchen while the peppers are baking. Sitting down to eat when the kitchen is clean is so rewarding and refreshing. Another quick tip is to start cooking the sausage first and while browning, begin the prep on the peppers.
Preparing for this meal is easy. All you need are bell peppers (I like the sweet bell peppers from Costco that come in a bag with red, orange, and yellow peppers though the green bell peppers are also great), sausage, spaghetti sauce, cooked rice, and shredded cheese. The last time I prepared these sausage stuffed peppers, my girls asked me to make them again that same week, I didn’t, but know when I do make them they won’t ever complain. That is what I call success!
Other options or variations for these sausage stuffed peppers include leaving out the rice, substituting in brown rice or adding the healthy option of quinoa in with the peppers. - 6 bell peppers
- 1 lb sausage
- 1 jar spaghetti sauce
- 1-2 cups cooked rice
- 1-2 cups shredded cheese
- Wash, cut in half and clean out each pepper
- Place each pepper open side up on baking dish
- Brown sausage
- Add cooked rice and spaghetti sauce
- Spoon sausage mixture into peppers
- Top with cheese
- Bake at 375 for 30-40 minutes until peppers are tender
