Do you have a garden? And do you feel like the only thing that grows is zucchini? Or do you have a neighbor who brings you lots of zucchini? Well, if so, lucky you because I know just what to do! My dad is an amazing gardener and I definitely reap the benefits of his fresh produce. I love zucchini and this is a delicious recipe I look forward to when I have plenty of the green stuff that grows like wildfire.

Don’t let quinoa scare you either! It’s easy, fast and very good for you. I love to substitute quinoa in for rice in most recipes. This is the quinoa I like as it comes pre-washed (washing it prior to cooking like some quinoa requires is tedious and I feel like I lose half of it in the washing process) and the directions on the bag are very simply. You can pick it up on Amazon or Costco. My favorite way to cook quinoa is with chicken broth instead of water.

Ingredients
  1. 1 lb sausage
  2. 1 medium onion, diced
  3. 2 small yellow summer squash, sliced thin
  4. 2 small zucchini, sliced thin
  5. 2 cups quinoa (cooked in chicken broth and prepared according to package directions)
  6. 5 eggs, beaten
  7. salt
  8. pepper
  9. soy sauce to taste (optional)
Instructions
  1. Brown sausage in large skillet over medium heat.
  2. Add onion, summer squash and zucchini to cooked sausage.
  3. Cover with lid, stiring occationally until vegetables are tender.
  4. You may need to turn heat to medium low.
  5. Push sausage and vegetables to sides, creating a hole in center.
  6. Pour eggs in hole and scramble until cooked.
  7. Add cooked quinoa and stir.
  8. Salt and pepper to taste, which may vary depending upon the sausage.
Notes
  1. Optional: Substitute yellow squash for extra zucchini.
  2. Sprinkle with Parmesan cheese or serve in warmed tortilla
