If not I highly recommend this recipe as a fun way to use up those extra pumpkins sitting around on your porch that you don’t want to carve. This dinner recipe is a tasty and festive way to celebrate all things fall. Each year we make this meal just prior to Halloween and love it. It is tasty, healthy and just plain fun and you should smell your house while it is cooking! Simply divine.

A festive fall pumpkin dinner favorite

Ingredients
- 1 onion chopped
- 1 lb ground beef
- 2 Tbsp soy sauce
- 2 Tbsp brown sugar
- 1 can cream of chicken soup
- 1 1/2 cup cooked rice, any variety
- 8 oz can water chestnuts
- salt and pepper to taste
Instructions
- Cut top off pumpkin, save as lid
- Clean out seeds and stringy stuff, ha ha not sure what it is called
For inside mixture
- Brown onion and ground beef
- Add soy sauce, brown sugar, soup, rice, and water chestnuts
- Mix all together
- Season to taste
- Place in pumpkin and place lid on top
- Use cookie sheet lined with foil under pumpkin
- Bake at 350-375 degrees for 60-90 minutes, depending on size of pumpkin
- Open pumpkin and scrape soft pumpkin
- Stir pumpkin into rice and meet mixture
Notes
- Choose pumpkin size depending on amount of casserole desired.
- Double recipe as needed to fill pumpkin.
- Optional: Sprinkle with cinnamon
