It’s still a little warm during the day, but the crisp mornings and cool evenings have my heart right now. I also love the change in my menu with this fall weather! I’m ready for soups and chili and stew, aren’t you?! Today I want to share my Instant Pot Beef Stew, as it is one of my favorites. It’s so easy, incredibly fast, and perfectly delicious! 

The Instant Pot saves my sanity on so many evenings when I just haven’t planned ahead… and let’s be honest- that happens a lot! I used to make my beef stew in the crockpot and it would take all day for that stew meat to get tender. Well, no more! I still use the exact same ingredients, but I’m done in a fraction of the time. 

Instant Pot Beef Stew
A quick and easy beef stew that will taste like it cooked all day!

Ingredients
  1. 2 pounds of stew meat ( I love Costco- I throw the whole package in)
  2. 1 can French Onion soup
  3. 1 can Beefy Mushroom soup
  4. 14.5 oz can Beef Broth
  5. 3 medium russet potatoes, chopped
  6. 1/2 bag baby carrots
  7. 3 stalks of celery, chopped
  8. 1/2 onion, roughly chopped
Instructions
  1. Place meat, beefy mushroom and french onion soups, and beef broth in the Instant Pot.
  2. Press Meat/Stew setting, then manually set the time to 15 minutes.
  3. Once the time is up and the pressure has been let out, open lid and quickly stir in all vegetables.
  4. Close lid and close pressure valve.
  5. Select Manual time and adjust to 5 minutes.
  6. Once the cook time has completed, I release the pressure faster by holding open the pressure valve on the lid. * Cover your hand with a towel or the steam will burn you! The vegetables run the risk of being mushy if you wait for the steam to release on its own.
  7. Thicken your sauce if you desire- I use a paste made of ice cold water and cornstarch. (Check the directions on your cornstarch. You can also use flour and water if you don't have cornstarch). Stir it into the stew and it will thicken quickly.
  8. Salt and Pepper to taste.

Instant Pot Love!

If you haven’t grabbed an Instant Pot yet, now is the time to jump on the bandwagon! Run over to Amazon and pick one up here. If you have a family, I would recommend the 8 quart because it’s all about the space! They have some now that are Bluetooth capable with an app you can download and who knows what else. It may even fly to the moon…I really don’t think those upgrades are necessary. Grab one of the basic Instant Pots and it will do the job just fine!
